The mood helps too. Brunch is unhurried by definition, which sets a different tone than another lunch-and-learn. From a British magazine, and from a hangover. The word was proposed in 1895 by a writer named Guy Beringer in a piece titled Brunch: A Plea, which argued that Sunday's heavy early breakfast should give way to a later, lighter, more sociable meal, partly so that people who had been out on Saturday night could sleep in. The word stuck. The argument, honestly, still holds.

The dishes carry their own histories. French toast is called pain perdu in France, lost bread, because the whole point was rescuing a stale loaf nobody wanted. Hollandaise is one of the five French mother sauces codified by Escoffier: an emulsion of butter into egg yolk that splits if it gets too hot or is pushed too fast. And shakshuka takes its name from a Maghrebi Arabic word for a mixture, which is exactly what it is.

• Falafel: crisp chickpea falafel with vegetables and tahini, with an optional cabbage salad.

On the French toast, eggs benedict and shakshuka menus you can add a cocktail session for another 30 minutes, and the chef walks everyone through a bloody mary or a mimosa. Add a coffee tasting instead and you explore origins, roast levels and brewing with beans from small farms. Grilled cheese and falafel take a wine pairing.

The cocktail add-on is entirely optional, and a brunch built around a coffee tasting instead of mimosas is just as good an event.
