National Relaxation Day

August 15, and its origin is better than most invented holidays. It was created in 1985 by Sean Moeller, who was nine years old at the time and argued that people were working too hard and needed a day off from trying. The whole point of the day is doing something unstrenuous on purpose.

Mid-August is well chosen. It sits in the flat stretch between summer holidays and the autumn push, which is exactly when teams start running on fumes and nobody has scheduled anything nice.

Because it's the rare hour where the task is completely clear and none of it is yours to plan. Someone else chose the recipe, someone else bought the ingredients, and a chef tells you what to do next. Your hands stay busy with something repetitive, your attention sits on one thing, and at the end there's dinner.

The group version adds one more thing: nobody is being assessed. The free trivia and mini scavenger hunt that come with every Rockoly event are optional, and on a relaxation day you can leave them out entirely. Nothing is scored and there's nothing to present at the end. That's the difference between an actual relaxation event and a team-building exercise wearing the label.

Three things have to be in balance: pectin, sugar and acid. Pectin is a carbohydrate in the cell walls of fruit. Heat it with enough sugar and enough acid and its long chains link into a mesh that traps the liquid, and that mesh is what a set actually is.

Some fruit brings plenty of its own. Apples, quinces, currants and citrus peel are high in pectin, especially when slightly underripe. Strawberries sit near the bottom of the list, which is why nearly every strawberry jam recipe calls for lemon juice, and often the seeds and peel too: the acid helps the pectin bond, and the lemon quietly donates pectin of its own.

The other number worth knowing is 220 degrees Fahrenheit, about 104 Celsius. That's the set point at sea level, and the rule behind it is 8 degrees Fahrenheit above whatever temperature water boils at in your kitchen, which is why good recipes tell you to watch a thermometer rather than a clock. Three menus built for a slow hour, each 60 minutes and led live by a chef:

• Pickling and Jams. Bring your own produce, including the odds and ends you were about to throw away, and we send a list of suggestions in advance. Add a wine pairing.
• Flexible Frittata. Eggs with colorful peppers, mushrooms, tomatoes and whatever else the fridge offers up. Add a cocktail pairing or a coffee tasting.
• Smokey Veggie Burger with roasted sweet potato fries, a plant-based patty topped with avocado, with an optional Green Goddess sauce. Add a tasting of three beers.

All three are vegetarian with vegan options, and gluten-free versions are available.

It's the opposite of a meeting, which is exactly why it needs to be on the calendar. Telling a team to take it easy is easy to say and impossible to protect. An hour that's already booked, already planned, with a chef waiting at the other end, is much harder for people to quietly work through.

August is a quiet month on most calendars, too. Teams come back from holidays out of sync with each other, and a low-stakes hour where nobody has to perform is a better reset than another kickoff. Pickling and Jams is the least expensive of the three, which tends to make it an easy one to get signed off.

Yes, and this is the least demanding set of menus we run. Pickling is chopping and pouring, a frittata is one pan, and the burger is a patty and a tray of fries. The chef leads every step live and nothing here is timed against anyone else, which is rather the point on a day about not trying too hard.

The logistics are equally undemanding. Headcount runs from 3 to 600 and beyond, with very large teams split by department or across days. Zoom is the default, and Google Meet, Microsoft Teams and WebEx work. Vegetarian, vegan, gluten-free, kosher and no-alcohol versions cost nothing extra when we know ahead of time. Kits ship free inside the US and travel to Canada, the UK, Ireland, Germany, Australia, Spain, Sweden, India, South Africa and Mexico among other countries, and anyone who would rather skip a delivery can work from a shopping list.

Yes, and these are the right menus for it. Most of the pickling is chopping and pouring, which is table work rather than stove work; the jam does want a pot on the heat for part of it, with the chef talking the group through that stretch. The frittata is one pan and the burger is a patty and a tray of fries, so neither one is an hour on your feet. And anyone who'd rather not cook at all can watch, talk and eat afterwards — nobody is checking who cooked and who didn't.

For anything more specific, like captions, or the recipe in advance so someone can work at their own pace, or a kitchen that doesn't allow much standing, tell your planner when you book and they'll tell you what's possible. Customization is free, and dietary needs and delivery run through the same person. August 15 is a day about asking less of people, and that ought to hold for everyone on the call.
