These are small layered cakes rather than a single sponge, which makes them fiddly to assemble and much easier to get right — a small cake bakes evenly where a big one domes and cracks. The whipped cream has to be taken to soft peaks and no further or it splits when you pipe it, and Chef Emily stopped several people who were happily heading past that point. The peach sauce is reduced down rather than a jam, so it's sharper than expected and needed against all that cream.
