The marinade is lemon-and-oregano heavy and it wants far longer than the session allows — Chef Emily said so plainly rather than pretending an hour was ideal, and suggested starting it the night before if you can. Mine had thirty minutes and was good; the batch I made a fortnight later with an overnight marinade was noticeably better. The tzatziki is where people go wrong: the cucumber has to be salted and squeezed out or the whole thing turns to soup within an hour.
