Drying the skin properly before it goes in the oven is the single thing that separates good roast chicken from pale disappointing roast chicken, and it's the step everyone skips. Chef Emily had us patting it down and leaving it uncovered while the oven came up. The other useful point was resting it for far longer than feels tolerable — fifteen minutes minimum, and the juices stay in the meat rather than on the board.
