Peanut as the base of a savoury stew rather than a garnish was the part that reframed things for me. Chef Emily was clear about adding it gradually and off the boil, because it splits if you rush it. The sweet potato and collard greens go in at different points for a reason — one wants to hold its shape, the other to collapse.
