I've eaten okonomiyaki in Osaka and had assumed it was one of those dishes that doesn't survive the trip home. It does. The batter is mostly cabbage held together by very little, which is the opposite of what a Western pancake instinct tells you, and Chef Quan spent time on getting that ratio right. Too much flour and it becomes a fritter. Mine held together and tasted like the real thing, which I did not expect from my own kitchen.
